Tuscan Beans

1 lb. dried cannelini beans

5 oz. prosciutto cut into thin strips

1/4 cup fruity extra-virgin olive oil

2 canned plum tomatoes, crushed.

2 cloves garlic

fresh sage

Soak beans overnight (minium 4 hours)

Heat oven to 375 degrees. Put all ingredients into a Dutch oven or covered earthenware casserole. Bake for two hours, until most liquid is absorbed.

Before serving, add a little more olive oil and freshly chopped parsley (4 T or so)
